I have recently been given the opportunity to participate in a cooking challenge for the chance to win a fabulous price of a 2 night mini cruise for 2! So naturally I jumped at the chance, this is my kind of thing; the chance to create a new recipe that I probably wouldn’t do if someone doesn’t challenge me to it, ingredients paid for (so essentially a free meal) and I had fun getting my 3 year old son involved and for the chance of this great prize… what’s not to love?!

Now I don’t pretend to be a great cook, I am not! I am guilty of sticking to same recipes week in week out and get stuck in this rut. But every now and then I will try to venture to the unknown and make a new meal (okay granted it’s usually from a recipe book) but still at least I try. This time I am all alone and need to come up with a Mediterranean inspired dish.

First thing I did was have a google to see exactly what Mediterranean style food was all about, the kind of ingredients used and why it is known as Mediterranean style. Basically to cut a long story short, it is all about using fresh ingredients, healthy cooking and lots of colour!


So the ingredients I choose to use were;

  • Gigli Pasta

  • Sunstream Vine Tomatoes

  • Sweet peppers Fresh Basil

  • Fresh garlic

  • Chicken breasts

  • Olive Oil

  • Light (reduced fat) Mozzarella

  • Turmeric

  • Foil

So first off, trim your chicken breasts if needed, chop the pepper into reasonably thin slices and do the same with the tomatoes. Get a piece of foil and make a little parcel out of it.

Place your chicken breasts in an individual parcel each, place the tomatoes, peppers, garlic, olive oil and a basil leaf. Close the foil parcels over and place in the oven around 180 degrees for roughly 40 minutes but make sure you check that it is cooked through as every oven is different.


Then put the pasta in a pan, add some Turmeric for a nice colour (not to mention all the health benefits!). If you are using the same pasta I am it only takes about 8 minutes to cook. *NB: I did not add enough turmeric which is why my pasta does not look particularly colourful*

When the chicken is fully cooked, add a slice of mozzarella cheese on the top and put back in the oven for a few minutes until it is melted.


Then dish it all up, add a few tomatoes around the edge of the place and a single basil leaf for decoration and tuck in! A fresh, healthy and colourful tasty meal.
